Tasty Treat Thursday

Today I'm sharing one of my all time summer favorites, black bean corn salsa. I got the recipe from my mom and I make it a couple of times a week. It is the perfect summer dish and while I eat it as my meal it could easily be served as an appetizer with tortilla chips! It is really simple to make and keeps well in the fridge. 



Ingredients
- 1 freezer bag steamfresh corn (you could also use fresh corn or canned corn!)
- 1 can black beans
- purple onion (to your liking)
-red bell pepper (optional. My mom doesn't use this but I love it!)
- Bunch of cilantro (again to your liking. I probably use 1tbs chopped)
-1/2 lime
- Italian dressing

Directions
- Cook corn in microwave
-Drain blackbeans
-Once corn is done place in a strainer and run cold water over it until it has cooled down. If you aren't going to eat in immediately then this isn't necessary.  
- Grab a large bowl and combine drained corn and black beans. 
- Dice your onion, pepper and cilantro. Then add to the corn/bean mixture.
- Stir it all up and add in half of a lime and some Italian dressing.I never measure it. If I had to guess I would say maybe 2-3tbs? I usually just splash some in and taste and see if I need more/less. Same with the lime!

I just love this recipe because it's so versatile. You can really customize it to your liking. The one thing I wouldn't leave out is the Italian dressing. As crazy as it sounds it really makes the dish. 


 I love to eat it with avocado,  chicken, and fresh tomato. If you haven't tried the purdue frozen breaded chicken you should. It's all natural with no preservatives and I love the taste. When I eat it with my black bean corn salsa I add lemon to the chicken. SO GOOD!


Another way I love to eat it is in a bowl. I just toss in the black bean corn salsa and add avocado, tomato and chicken.


 So there you have it! One of my favorite summertime meals. It's quick, easy, and fresh. What more do you need for a great summer meal! Oh and it's hubster approved. He LOVES it!

Yum! I make a variation of this and call it Georgia Caviar! Instead of Italian dressing, I use oil, apple cider vinegar, sugar and Tabasco sauce. So good both ways!
